It’s FRI-YAY!!! Finally. This has been a week from $%#&*!!! But Friday is here!!! Every Friday night we have a neighborhood “drink night” on our culdesac, the kids run around and play while the grown-upsย catch up on the weeks’ happenings and relax with a cocktailย of choice. It’s something I very much look forward to. We have such fun neighbors and a street full of kids close to Piper and Kenzie’s age. Since today is Friday I’m sharing one of my new favorite summertime cocktails, a Strawberry Basil Mojito using Sparklingย Ice fruit flavored fizzy water.ย

Strawberry Basil Mojitos
I’m a sucker for Mojitos. They are so light and refreshing. I decided to take a new spin on the classic mint mojito and used basil in place of the mint (since we have an abundanceย of it in our garden), and vodka in place of the rum to cut down on sweetness. The Sparkling ICE flavor Kiwi Strawberry made the perfect addition to this slightly sweet cocktail. Another added bonus is the Sparklingย ICE has no added sugar and 0 calories making it a true “skinny cocktail” I’m not one to count calories but I don’t like overly sweet drinks.
So here’s how you make it.
Ingredients:
- Kiwi Strawberry Sparkling ICEย
- Vodka
- Fresh Basil (5-6 leaves per glass)
- Ice Cubes
- A Muddler is optional
Directions:
Fill your glass about halfway full with ice cubes, cover with fresh washed basil. I used about 6 leaves. Pour your choice of Vodka to fill your glass about 1/3rd full It looks like more then it is because of all the ice. Top the remainderย of the glass off with your Kiwi Strawberry Sparkling ICE. Muddle with a muddler or simply mash the basil up with your straw stirring well. It’s that easy and it is soooย good!
