Just Like Starbucks. Egg Bite Recipe.

I might be late to the game on this trend, but oh my gosh, I made these copycat Starbucks Egg Bites and they were so good! I was surprised by how easy they are to make. My girls play a lot of sports, so these egg bites are perfect to make ahead of a busy weekend filled with early morning soccer and softball games. They are packed with protein and are easy to heat up in the microwave before heading out the door.

Note: This might not be the best time to post this, with egg prices right now. You might want to get chickens! 

Ingredients: (makes 12 egg bites)

6 eggs

2/3 cup cottage cheese

1 cup shredded cheese – I used a Mexican blend, but you can use whatever cheese you’d like 🙂

1/2 teaspoon salt

A few shakes of pepper

3-4 slices cooked bacon, chopped (I used turkey bacon because that’s what we like)

Optional: sliced green onions

You’ll also need:

A Blender

Silicon Muffin Cups or a Silicon Muffin Tray

Rectangular Cake Pan (if you are using a muffin tray, make sure the silicone tray is smaller than the cake pan so you can put boiling water in the cake pan and the silicone tray on top)

Here’s how to make the egg bites:

Preheat oven to 325.

Start boiling water to add to the cake pan when ready.

Blend eggs, cottage cheese, shredded cheese, salt, and pepper in a blender until smooth.

Spray silicon muffin cups with cooking spray. (Not absolutely necessary if you don’t have cooking spray, but it does help them pop out easier)

Sprinkle chopped bacon and green onions, if using, into the bottom of each silicone muffin cup.

Pour egg mixture into muffin cups. Place the muffin cups into the cake pan and pour boiling water around the base of the pan to cover about halfway up the cups.

Bake for 22 minutes without opening the oven door.

Let cool for about five minutes and enjoy! Makes 12 egg bites.

You can save the egg bites in the refrigerator for a few days and microwave them for 30 seconds to warm them back up.
